We just be down home cooks here y'all

Yeah it aint pretty, but boy is it good. This is one of "Our Happy Clan's" favorite's. Eileen's mom found this recipe for "Barbara's peachy chicken" about 5 yrs ago and we have used it ever since with a few of our own touches!

We always serve this with an Orange Viniagrette dressing on a simple salad with a few orange pieces and toasted almonds, with a side of Basmati rice. You can throw some of those almonds in the rice if you want to as well.

The flavors of the orange and the peach chicken together are out of this world. The salad is light and fresh, while the chicken is very very moist and flavorful!

Barbara's Peachy Chicken

Grease a caserole dish with butter or oil. Preheat oven to 375.

3 chicken breats
Flour, salt and Pepper -Shake in a ziploc bag- coat the chkn breasts
Brown the Chkn breats in a bit of oil and butter for a few minutes until light golden.
Place browned chicken in casserole dish

Mix 1 1/2 cups Orange Juice with 1 teaspoon of Basil, 1/2 teaspoon of nutmeg, 2 Tablespoon's white vinegar, 2 Tablespoon's of brown sugar.

Pour over chicken.
Cover and bake 1 hour and 15 minutes - baste a few times to keep tops of chicken moist.
Open a can of peaches. Place peach halves in between chicken peices and cook 15 minutes longer uncovered.

Make it tonight, its a feast day August 15th, one of the largest feasts for us Catholics, celebrate well and dont forget to attend Mass!

MMMMMmmmmm! Looks yummy and more importantly, kid friendly! Always looking for an alternate to chicken nuggets and macaroni and cheese (or as you Canadians say "Kraft Dinner" ;0) )

Sounds so yummy!! Any "NEW" chicken recipe is a "GOOD" chicken recipe...
