Best Blueberry Coffee Cake ever!
Granite Steps Country Blueberry Coffee Cake
Recipe courtesy Paula Deen
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1 (12-ounce) can buttermilk biscuits
1/2 cup (1 stick) butter, melted
1 cup quick-cooking rolled oats
1 1/2 cups fresh or frozen blueberries
1/2 cup sugar
Preheat oven to 375 degrees F.
Generously grease a 9-inch square baking dish. In a small bowl, combine brown sugar and cinnamon and mix well with a fork. Separate biscuit dough into 10 biscuits. Cut each biscuit into quarters, and dip each piece in melted butter and coat with brown sugar mixture. Arrange in a single layer in baking dish. Sprinkle with 1/2 cup of the oats.
Combine blueberries and sugar in a bowl and toss to coat. Spoon over oats and biscuits and sprinkle with remaining 1/2 cup oats. Drizzle remaining melted butter on top. Bake for 20 minutes or until cake is golden brown and center is done. Cool for 20 minutes. Serve warm.

I know its a terrible title, what are the Wiecks going to post next? Not much, just the awful confession that I (Eileen) have taken to snacking on whole bags of caesar salad croutons. Ok, not just any crouton, they must be safeway brand, anything esle would unacceptable. I am a nursging mom after all.
Just the thought of eating a whole bag of buttery fried bread is enough to make one sick, but yes I am actually doing it. Hey, everyone has a weight loss program, I thought I'd give this one a try. mmmmmmmm

Butterhead
Why, I dont know. Why is it always James?
I find myself asking this question a lot particularily after cleaning the house and mopping the floor, hoping for a day of refreshing bliss. It never fails on those days that some type of oily substance in the house gets a test run from my two year old.
I have decided to change my blog from "Our Happy Clan- changing the world one diaper at a time" to something a little more realistic, like "Wieck mishaps", or "life's little unfortunate moments", can't decide. Im taking ideas. This seems to be my number 1 topic.
All in all we are blessed. I thank God for each opportunity to have a little head to clean butter out of.

Kitchen Safety
This morning started nicely, Vincent taking the boys on their daily romp, a bike ride all around the trail at 7 a.m. Him doing the biking of course, while our 2 little princes ride in heir chariot, motionless, big eyed and silent.
The moment they walk in the door the action begins, "mama, mama, brekie, brekie!" Breakfast if you couldn't translate.
Kitchen safety tip #1- never try to scrape egg and grease out of a pan while still flaming hot. Doing so can result in eye loss. I tested the theory myself today and the result was one small scrap of burning egg flying into the conjunctiva of my left eye, not before searing the sclera. Ok enough nurse talk, it hurt like a missile firing through my head. Words flew out of my mouth at the same time, sounding somewhat like a cross between a prayer and a curse.
Top it off with a little boy who likes to wear his toast and jam as a hat every meal, and we have a well balanced morning:)

A is for awake; B is for Bad Vitamin…
Yes B, that beautiful vitamin. In copious amounts it is designed as more than a natural pick me up, in fact it creates such an awake, alert state that it is truly one of the best gifts you could give yourself- just make sure its morning when you take it.
When my darling husband kindly brought me home Jamba Juice last night at 10 I was sooooooooo grateful. I am sick with a bad head cold right now. I really need sleep, it’s been 3 long hard days, and Vincent has had to pull extra hours and meetings – God bless that Saint of mine! So I was happy to see my sweetheart after a full day of weepy eyes and head pressure, weep with me now, you can do it, I feel the love already in the form of your sympathy.
Shortly after drinking the first few sips of Jamba juice (my usual is orange a peel- with double immunity boost) I noticed it tasted a bit different, just couldn’t put my finger on why. Maybe bad fruit? After 7 hours of not being able to sleep a wink despite an accompanying feeling of dead tired, I realized it tasted different because what was added was most likely the double B vitamin alert boost. Would have been bad enough if it was a single, but a double. Whew.
